Serving suggestions
Roast lamb would be ideal or a weighty lasagne and other hearty dishes. Mature Cheddar would also make a good partner. With age, the wine will lose some of its exuberant fruit and gain more complexity.

Description
Pepperton Estate Shiraz is from a winery set just outside the Riverina region in New South Wales. Known variously as the MIA (Murrumbidgee Irrigation Area), Riverina or Griffith, it was semi-desert until irrigation was introduced in the 1920s. The offer of cheap land lured people across the world to emigrate, particularly those from Italy. Today, you will still find a strong Italian community there.

This particular cellar was founded in the mid 20th century by the Rossetto family. Just in the last ten years, it has received considerable investment and a new winemaking team are now in place, headed up by Danny Toaldo.

Although the cellar has been thoroughly modernised, Danny and the team held on firmly to the old-fashioned, open-top fermenters. This old bit of kit isn't so good for fresh whites, but works a dream at extracting all the rich colour and flavour for red wines.

This winery is renowned for producing a particularly chunky style of red, yet the wines of 2007 were even more weighty than normal due to the drought conditions. The volume produced in Australia in this vintage was down by a whopping 40%.
