Jerez Fino is made from grapes grown around the ancient Spanish city Jerez. Here the vineyards are higher and hotter than along the coast so the flavours are bolder – elegant almond scents and a gentle, savoury plate which tantalises the taste buds.

And this is pale coloured, tangy, nutty Fino sherry from a small sherry bodega highly rated by wine writer Hugh Johnson. Fresh and totally dry. Serve chilled with stuffed olives and smoked almonds.
