PX stands for Pedro Ximémez, the grape which, after being dried in the sun, produces the sweetest of all sherries. Traditionally used for blending though there has been a trend of late by some shippers to also bottle it pure. Dark and treacly-sweet, it is a wine to enjoy with dark chocolate pudding or Christmas cake.
