"Rack'em once, and once only!" It's a technique we only dare use during the maturation of certain wines. 'Racking' is the process of decanting the young wine from the 'lees' – the sediment which give wine its 'mouthfeel' ... that voluptuous, creamy, silky texture. By only racking once, you keep maximum flavour in the wine. But only the strongest, healthiest wines (like our Rack One) can cope with being left 'au naturel' all the way!
