Touché Cabernet Sauvignon Reserve comes from the one and only William “Bill” Knuttel, a winemaking icon who made a name for himself at Saintsbury and Chalk Hill, two of California’s top estates, before branching out on his own. A deeply fruited, supremely balanced pour with fine tannins, its name is a nod to the precision and craftsmanship Bill brings to every bottling.

Because the original release of this wine was his first-ever private Reserve, Bill continues to pull out all the stops to produce it.

He starts with pristine Cabernet Sauvignon grapes from Bucher Vineyard in Napa’s prized Oak Knoll district, where fog helps keep temperatures down, creating wines that are among the most elegant and understated in the area.

Then, back at the winery, he ferments the juice with native yeasts and extends skin contact for a week to ensure its color will be as opulent as its taste. Finally, after pressing it into fine French oak, he ages the wine for a nice long 16 months.

The result is plush and intensely flavorful, overflowing with dark red berry, cherry and coffee flavors, nuanced by tones of toasted oak and the faintest hint of black pepper.

Absolutely delicious on its own, it would also be a welcome partner for steak or hearty lentils.
