CavÉ L’Estabel
Cabrières is the smallest appellation in the Languedoc, the sunny region along France’s Mediterranean coast. This tiny, star-shaped village has a unique, schist-strewn terrain and a tradition of making luxurious rosés that stretches back for centuries. Now, it’s finally getting the attention it deserves.
With only 940 acres of vineyards, Cabrières is home to just a few producers. One of them is the renowned Gérard Bertrand, who recently acquired an estate and released the world’s most expensive rosé ($170+). But the smart money goes to Cavé L’Estabel, the local cooperative of 20 families who have been making fine pinks for generations.
