Hailing from southern France’s sunny Languedoc region, Charles Cros represents the revitalization of a historic winemaking cooperative. What’s the story?

Over 40 years ago, the Fabrézan winemaking co-op practiced carbonic maceration. In this winemaking technique, the winemaker ferments whole bunches of delicately hand-harvested grapes, then decants the juice off the skins at the precise moment when the best color and aroma have been extracted. Given the cost and precision required, the co-op eventually ceased using carbonic maceration for its wines.

But today, new head winemaker Quentin Fischer has brought back the technique. So now, the Fabrézan co-op is the only producer in the Languedoc using 100% carbonic maceration. That makes this exciting red wine truly unique.

Named after Fabrézan native Charles Cros (a poet and inventor), the wine marries hand-harvested Carignan, Syrah and Mourvèdre. Look forward to expressive, ripe plum, black currant and garrigue (wild herb) aromas. The palate is beautifully smooth, with fresh fruit flavors and silky tannins. It’s a red wine you can enjoy lightly chilled on a warm day or alongside anything from beef to salmon.
