Wine Flavor Profile
Gabel Herxheim Honigsack Spätburgunder is a dry, medium-bodied red wine. On the nose, it offers aromas of fresh raspberry and cherry, as well as subtle roasted fruit notes. Similar flavors are presented on the palate, underpinned by a distinct minerality across a long finish.

In Herxheim am Berg, one of the highest elevation villages along the official wine route in Pfalz, Germany, the Gabel family has been making wine for some 350 years. So it’s safe to say, they know a thing or two about making some seriously delicious juice. Gabel Herxheim Honigsack Spätburgunder—or Pinot Noir, as we’d say in English—is consistently one of their best reds, with raspberry and cherry tones anchored neatly by a stoney core.

Brother and sister Oliver and Lisa Gabel have been heading up the estate since the early 2000s, increasingly implementing sustainable practices with the aim of creating “structured and mineral-influenced wines.” And this one is especially close to Oliver’s heart.

Made with organic grapes from the famed Herxheimer Honigsack vineyard, it’s the winery’s flagship Pinot, a grape Oliver developed a deep love for while working in Burgundy, honing his winemaking skills. As such, the wine is definitely Burgundian in style—both in production and in the final bottle.

After native yeast fermentation, the wine aged 18 months in fine French barriques before being bottled without filtration. And in the glass, it offers a “distinctive minerality and plenty of punch,” says the Gabels.

Look forward to a well of delicate fresh red fruit tones layered with weightier flavors of stewed fruit and that undeniable minerality the family is so passionate about. It’s the perfect partner for meats of all types, but especially turkey.
